By buying a sim card you expose yourself to cameras in the store possibly also through your payment method, most countries need kyc, but lets say you get around all that with a esim or a card registered on a homeless person, you still need to tie the sim card with a phone and connect to the cell towers. These are some of the risks you open yourself up to when you use a sim, but lets also assume you mitigate this by using a one time number from a service such as smspva, well your telegram account will still be tied to the fingerprint of the device you used to register the account. This is why buying an account is much safer and much less hassle.
